I used PoE's for my AP's.. that 48V... isn't that overkill for these little cameras?

You don't need to worry about the voltage. The 48V is required to get power through small wires. That is handled internally. You just need to worry about the power consumed in Watts

Okay so that switch supports up to 370W of PoE power. That is plenty. Cisco really makes you work to find that number.

It's not a pc running an os so things like hard drives, software features, camera support, etc are not likely to be changeable.
