I'm not sure how does KaTeX handle CSS stuff and assigns the class to it. \color has some very special way to pass the specified color somewhere out (And I wonder who call the "handle")...

and the answer to that (which you can test against real TeX/LaTeX) might inform what you need to do

I've tried it with LaTeX and the result is: operators does not change the face.

alphabets do change the face.

You can wrap the whole equation in mathbf and the only thing that changes is Latin and Greek characters.

And numbers of course. Maybe using CSS font "fallback" should do the trick.
